From the heart of Sannio, a tradition that continues

In the enchanting medieval setting of San Marco dei Cavoti , a village founded in 1300 by settlers originally from Provence, the Fiorelli family has been carefully selecting the best raw materials since 1988 to create confectionery products of the highest quality under the La Provenzale brand.

Respecting ancient recipes and artisanal production methods , each of our creations tells the story of a region rich in authentic flavors and a passion that has been handed down for generations.

1. Rigorous Selection of Raw Materials

The utmost care is taken in selecting each individual ingredient:

Chocolate: We use only premium Belgian chocolate , free from hydrogenated fats, animal fats, or low-quality vegetable fats. Only pure cocoa butter. Our white chocolate maintains a cocoa content of at least 70%.

Hazelnuts: Exclusively the prized Giffoni PGI Round Hazelnuts , unique and unmistakable, the ideal choice for superior quality confectionery products.

Honey: Handcrafted in the Sannio area exclusively for La Provenzale, our sulla honey stands out for its elegant, delicate yet persistent flavour.

Almonds: Apulian almonds are preferred for their very low acidity, a guarantee of pure and long-lasting flavor.

2. Respect for Tradition

The dough inside our creations is rolled out by hand with a rolling pin , following a centuries-old tradition that has been handed down from generation to generation.

The use of any preservatives is completely avoided during processing. The artisanal nature of the production process naturally results in the products being non-uniform in shape and weight—a distinctive feature that guarantees the authenticity of handmade products.
